Chef Nobu Matsuhisa and Chef Eric Ripert Hold Second Charity Dinner with Proceeds to TOMODACHI
On October 6, 2014 Nobu’s Japan held its second charity dinner event at Nobu Tokyo. This dinner featured the culinary talents of host Nobu Matsuhisa and Eric Ripert, the owner/chef of Le Bernardin in New York. As with the first charity dinner, held in July, the charity dinner marked the climax of the filming of a Discovery Networks TV series that tells a story about Japan’s vibrant culinary culture as seen through the world’s top chefs. In the filming of the second episode Chefs Matsuhisa and Ripert travelled to Nagasaki to learn about the influences of the city’s multi-cultural heritage has on its food scene and to sample the incredible variety of ingredients from both land and sea.
The charity dinner menu created by the two celebrity chefs featured the fresh ingredients from Nagasaki while weaving the region’s culinary traditions and styles into each dish. The 10-course menu included “Ohire” soup with Suppon and Matsutake, Nagasaki King Mackerel and Caviar, Citrus Mariniére, Chawanmushi with Togan, Ume and Hamaguri Clam, Nagasaki Spiny Lobster and Portabellos with Black Truffle Sauce and Shaved White Truffles, A Collaboration Main Dish featuring the Award Winning Nagasaki Wagyu and Nagasaki “Castella” with Coconut and Kuromitsu for dessert. The dinner also featured an assortment of wines and sakes as well as signature cocktails from both Nobu and Le Bernardin.
